The warm and dry 2012 vintage produced a 2012 Hacedor de Mundos Cabernet Franc with surprisingly high acidity. It was cropped from vines planted on granite soils in the Loncomilla sector of Maule. It fermented in stainless steel vats and matured in used French barriques for 18 months during which time the wine was racked three times. Forget about the style of the wines from this year in other parts of Chile, this is terribly fresh and aromatic, floral and not herbal. The palate has the fine-grained, elegant tannins of the variety, and the wine has a salty side to it, with a very tasty finish. 5,000 bottles were filled in January 2014.
Fermented in stainless steel tanks using traditional techniques that include 3 pump-overs per day. Post-fermentation maceration for 3 weeks before the wine is placed in French oak barrels, where malolactic fermentation is finished in 18 months.
