Ironworks Rum


The recipe starts with Fancy Grade Molasses from Crosby's in Saint John, New Brunswick. After fermentation and a double distillation, the contents are poured into Kentucky bourbon oak where it matures for the next year. Taking on the vanilla from the oak and earthy tones of the charcoal, this amber rum turns a rich shade of ruddy gold in the process. This rum is highly fragrant and follows with a clean, sharp and sugary finish.

Crosby’s Molasses is the highest grade of molasses available. Fancy molasses is the pure juice of the sugar cane, condensed and purified. It is 100% natural and contains no additives or preservatives.


A Rum Amongst the Trees

1 1/2 oz Ironworks Amber Rum
1/2 oz Ironworks Apple Brandy
1/2 maple syrup
1/2 oz lemon juice
1 sprig of rosemary, leaves removed from the stem
Combine all the ingredients in a cocktail shaker, add ice and shake vigorously for 12 seconds. Strain through a fine mesh strainer into a chilled coupe.
