Tasting Notes
Plums, figs, oranges, brown sugar and spices. Rosemary, cinnamon and cola with a finish that rolls right into the next sip. Made in the style of a traditional Italian Rosso Vermouth, but with enough Vancouver Island character to stand on its own. Over twenty different botanicals are precisely extracted into a continuously aged Solera and then added to our fortified mead to create a sweet vermouth tailor made for classic cocktails like a Negroni, Martinez or Manhattan.

We uncovered techniques, botanicals and formulas from the great, long-forgotten, 19th-century Vermouth houses of Italy and North America and combined this knowledge with a modern and empirical approach.
Each botanical is extracted completely separately from one another and then blended after extraction - this allows us to accurately dial in the exact desired flavour, regardless of seasonal/regional changes. This extract blend is then continuously aged in a Solera system.
As always, all of our products are made from mead on Vancouver Island, using 100% British Columbian honey from our own apiary in Fort St. John managed by Paradis Apiaries FSJ.
