Tasting Notes
Cherry red with hints of purple. Red berry aromas with typical herbaceous Caberne Sauvignon notes. Full bodied with blackcurrant fruit, prune and herbs on the palate. Well-integrated oak and soft tannins, with a lengthy finish.
Made from premium Australian Cabernet Sauvignon grapes, fully fermented as a regular wine before the alcohol is removed.
How it’s Made
The fruit was crushed and fermented on oak at cooler temperatures of 18 – 22C for 5 – 7 days. This allows the fruit flavours to be nurtured and enables retention of varietal characteristics. Post fermentation, we use the latest spinning cone technology, working at low temperatures to gently remove the alcohol and to ensuring the wine maintains its delicate fruit flavours.
