Tasting Notes
Lovely pale pink colour and very aromatic nose of white fruit and citrus. Delicate on the palate, with flavours of citrus and red berries and great freshness. Well balanced with good length.
Perfect with salads, barbecue, light dishes, "provençale" or asian food. Wonderful for an aperitif between friends.
Rolle /Rahl/
a.k.a Vermentino
A light-skinned wine grape variety, primarily found in Italian wine. In Languedoc-Roussillon and Provence it is known as Rolle. Known for its refreshing acidity and attractive aromas of peach, lemon peel, dried herbs and a whiff of saline minerality.
Caladoc /cal a DOC/
A red French wine grape variety planted primarily in the Southern French wine regions such as the Languedoc. The grape is a crossing of Grenache and Malbec created by Paul Truel in 1958 at Institut National de la Recherche Agronomique (INRA) with the aim of having a vine that could grow in southern France that was less prone to a specific viticultural hazard called coulure.

Vinification: Direct pressing, maceration of bourbs for 15 days at 0°C, racking by cold (clarification of juices before fermentation), fermentation at low temperature, tapping (all under nitrogen injection for total protection on oxidation), tangential filtration
