Winemaking

Every great wine starts in the vineyard, and that's where Sovi starts too. The wine comes from a multi-generational family-owned winery in Clarksburg, California that practices certified sustainable farming. They work closely with the vineyard manager and winemaker to create rich and expressive wines. Then, they remove the alcohol. Our promise to you is a low-alcohol wine that does not compromise on flavor or experience.

How it’s Made

 1. We start by making traditional wine.

2. Next, we remove the alcohol (to less than 0.5%) with a technology called vacuum distillation. We distill the wine at a low temperature in a vacuum to keep as many aromas and flavours as possible.

3. Then we blend in a minimal amount of grape juice concentrate to get the exact balance we’re looking for. Similar to a dosage in Champagne.

4. Finally, we add bubbles and put it into Cans

Why Cans?

Cans are more easily recyclable and eco-friendly than traditional glass wine bottles. Single=serving size means that there is no need to open a bottle if only 1 or 2 in a group is drinking NA wine! They are convenient - perfect for on-the-go occasions.

Sovi’s Story

Sovi was founded by the husband-and-wife team of Julia Littauer, Certified Sommelier, and Alex Littauer, DipWSET, based in Napa, California. They are passionate about producing the best possible low-alcohol wines that do not compromise on flavour or experience, leveraging our combined 20 years experience in the wine industry. As wine-lovers, we created Sovi for the times that you want to enjoy a glass of wine, but without the effects of alcohol.

The Region

Clarksburg, California is an often-overlooked area about 40 miles east of Napa on the Sacramento River Delta. The climate there is perfect for growing characterful grapes: warm sunny days result in beautifully ripe flavours while the cool breezes off the San Pablo Bay help the grapes maintain their naturally crisp acidity.
