Tasting Notes

Expressive on the nose, with dominating notes of white flower and fresh fruits like pear and lemon. On the palate, fresh, well-balanced, with lemon, grapefruit, and a touch of softening pear. A pleasant, lengthy finish.

Winemaking Notes

Grapes very carefully protected against any oxidation as soon as they are picked up and during the carriage into the cellar. Harvest is done at night, when the temperature is the lowest. Complete de-stalking, direct pressing into CO2 atmosphere. Stalling for 24 hours, and immediate racking at 8°C. The clearest juices only are selected. The fermenting process sets off with selected yeast addition, in stainless steel tanks, under heat monitoring for 30 to 40 days. Maturing on fine lees, all winter long, with regular stirring of the lees. Fining, filtering, and bottling. Ageing in stainless steel tanks.

Region Notes

Pays d'Oc IGP wines were previously labeled as Vin de Pays d'Oc (established in 1987), although since 2009, the VDP category has been phased out of French wine laws. It has now been replaced with Indication Géographique Protégée. The area corresponds roughly to the Languedoc-Roussillon wine region, and covers all the wines that do not abide by the various AOC appellation rules.

The Pays d'Oc area has a Mediterranean climate with hot, dry summers and mild winters. Most of the rainfall is compressed into spring and autumn.

Dry, continental winds from the northwest bring cooling influences to the vineyards, as well as reducing disease pressure. This is interspersed with warm winds from the south which can bring much-needed rain.
